Night School for Cheese Fans

Enhance your cheese knowledge and appreciation, while enjoying Leslieville Cheese Market's flavourful wares at this series of fun, tasty and informative classes. Each one hour class costs $20 and includes the opportunity to save %10 on all cheese purchases. Special class rates occasionally apply. See individual class descriptions below.

September 23 Back to School (East Market)
This crash course in the basics of tasting and talking about cheese covers the basics of production, styles and flavours. You'll leave poised to impress your fromagista friends, and ready to talk back at the cheese counter. A glass of wine makes learning easy!

September 30 Local Harvest (West Market)
Like apples, pears and squash, cheese is a seasonal food. A long summer of grazing makes for happy animals, full-flavoured milk, and the best cheeses of the year. Come enjoy a 'harvest' of cheeses selected from Ontario and Québec, paired with local produce and wine.

October 2 Local Harvest (North Market)
This special event takes place at the Market's latest location, in prime cottage country. Enjoy an hour and a half of the finest local cheese, charcuterie, and specialty foods the shop has to offer. Delicious non-alcoholic beverages as well as a selection of wines will be on hand. $40 (special class rate)

October 21 From the Farm (East Market)
Farmstead production yields cheeses of exquisite quality and authentic taste of place, yet small-scale, rural cheese making is a dying craft, worldwide. Taste the wares from several local and international farms, and learn how inimitable flavours are created. Let your taste buds make the case, as you compare industrial and farmstead versions of the same cheese.

October 28 Whisky, Whiskey and Cheese (East Market)
Some cheese lovers never wade into arguments about whether beer or wine goes better with cheese: these are the folks with a wee dram in their glass and a big smile on their face. Scotch, Irish and North American malt and grain whiskies make fine, sophisticated partners for the most bold, complex cheeses. Join Julia Rogers and Sam Corbeil for this rare opportunity to sip and savour. $40 special class rate.

November 18 Rock Star Cheese (West Market)
Spend an evening enjoying contemporary and classic cheeses that have developed cult status. What combination of mystique, glamour, flavour and "being in the right place at the right time" allows some cheeses to become icons? Are their reputations always deserved? Who will be the next new star? Let's talk!

November 25 Republic of Cheddar (East Market)
Good Canadian Cheddar is surely one of the tastiest, most deservedly popular cheeses around, and everyone seems to have a favourite. Come sample Cheddars of different ages and milk types from various provinces, and learn about the fascinating history of our national cheese.

Professional Development for Cheese Retailers

Cheese Culture now offers the following educational opportunities for cheese professionals:

Cheese Fundamentals for Retailers
A five-hour (two session) course that develops product knowledge and customer service skills. Lectures, discussions, tastings and activities cover the following topics:

  • Cheese history, production, ingredients, families, regions and current issues
  • Sensory appreciation of cheese and communication of cheese flavour
  • Advising consumers about cheese selection, storage and service for optimal enjoyment

Materials and presentation are adapted to the retailer’s inventory, learning goals and existing level of knowledge. The course is on-site and at the client’s convenience.

Wine for Cheese Professionals
A five-hour (two session) course that provides fundamentals for understanding wine. Lectures, discussions, tastings and activities cover the following topics:

  • Sensory appreciation of wine based on a strategic approach to tasting
  • Overview of grape varieties, flavour profiles and major styles
  • Theory and application of food and wine pairing principles with an emphasis on cheese
  • Instruction leading to the WSET Foundation Certificate is also available. Ask for more information about this internationally recognized credential.

Materials and presentation are adapted to the retailer’s inventory, learning goals and existing level of knowledge. The course is on-site and at the client’s convenience.

Master Classes for Cheese Retailers
Customized educational seminars and workshops for retail teams with specific learning goals. Topics include, but are not limited to: advanced cheese and wine pairing, regional or seasonal cheese focuses, cheese catering and gift programs.
