14 Eat Better Cheese
Now here's a resolution that should be
easy to keep! Learn to taste for quality as you
sample Leslieville cheeses that are top in their
class. Sharpen your judgment by trying to spot
a supermarket imposter, masquerading as good
cheese! A glass of wine is sure to enhance your
skills.
February
4 Alpine Cheese
Whether for après ski, or après day-lounging-around-on-the-couch,
nothing is more restorative on a cold winter
day than a plate of hearty mountain cheeses,
some crusty bread and a dry sausage or two. Come
sample a spread of Alpine classics from Switzerland,
France and Italy, while learning about the history
and styles of mountain cheese.

Beat the February blahs and pick up ideas
for Valentine's day at this evening of fabulous
sweet and salthy flavours. Enjoy a range of cheeses
paired with condiments, cake, chocolate and an
after-dinner tipple or two.

Québec Cheese: Past and Present
It's fair to say that Québec cheese is
a Canadian favourite, with a reputation for quality
and creativity appreciated from coast-to-coast
and internationally. This class outlines the
400-year history of dairying in La Belle Province,
and provides opportunities to taste traditional
and contemporary styles.

I Never Met a Goat I Didn't Like
Whether you are a confirmed chèvre-o-phile,
or still on the fence, this class will impress
you with the diversity of goat cheeses, and their
long and fascinating history. Come sample a surprising
range of flavours from all over the world, and
discover just how likeable goats can be.
April 8
Baa Baa Best Sheep
Sheep were the earliest animals domesticated
for dairying, and though their milk yield is
small, it has special properties that make it
a treasure for cheese makers and consumers alike.
Come learn why as you sample a selection of tasty
ewe cheeses from near and far.

Cheese Culture now offers the following educational opportunities
for cheese professionals:
Cheese Fundamentals for Retailers
A five-hour (two session) course that develops product
knowledge and customer service skills. Lectures,
discussions, tastings
and activities
cover the
following topics:
- Cheese history, production, ingredients, families, regions
and current issues
- Sensory appreciation of cheese and communication
of cheese flavour
- Advising consumers about cheese selection, storage and
service for optimal enjoyment
Materials and presentation are adapted to
the retailer’s inventory, learning
goals and existing level of knowledge. The course is on-site and at the client’s
convenience.
Wine for Cheese Professionals
A five-hour (two session) course that provides fundamentals for understanding
wine. Lectures, discussions, tastings and activities cover the following
topics:
- Sensory appreciation of wine based on a strategic approach
to tasting
- Overview of grape varieties, flavour profiles and major styles
- Theory and application of food and wine pairing principles
with an emphasis on cheese
- Instruction leading to the WSET Foundation Certificate is also
available. Ask for more information about this internationally recognized
credential.
Materials and presentation are adapted to the retailer’s
inventory, learning goals and existing level of knowledge. The course is on-site
and at the client’s convenience.
Master Classes for Cheese Retailers
Customized educational seminars and workshops for retail teams
with specific learning goals. Topics include, but are not limited
to:
advanced cheese and wine
pairing, regional or seasonal cheese focuses, cheese catering
