This crash course in the basics of tasting
and talking about cheese covers the basics of
production, styles and flavours. You'll leave
poised to impress your fromagista friends, and
ready to talk back at the cheese counter. A glass
of wine makes learning easy!

30 Local Harvest (West Market)
Like apples, pears and squash, cheese
is a seasonal food. A long summer of grazing
makes for happy animals, full-flavoured milk,
and the best cheeses of the year. Come enjoy
a 'harvest' of cheeses selected from Ontario
and Québec, paired with local produce
and wine.

This special event takes place at
the Market's latest location, in prime cottage
country. Enjoy an hour
and a half of the finest local cheese, charcuterie,
and specialty foods the shop has to offer.
Delicious non-alcoholic beverages as well
as a selection of wines will be on hand.

Market)
Farmstead production yields cheeses of
exquisite quality and authentic taste of place,
yet small-scale, rural cheese making is a dying
craft, worldwide. Taste the wares from several
local and international farms, and learn how

and farmstead versions of the same cheese.

Cheese Culture now offers the following educational opportunities
for cheese professionals:
Cheese Fundamentals for Retailers
A five-hour (two session) course that develops product
knowledge and customer service skills. Lectures,
discussions, tastings
and activities
cover the
following topics:
- Cheese history, production, ingredients, families, regions
and current issues
- Sensory appreciation of cheese and communication
of cheese flavour
- Advising consumers about cheese selection, storage and
service for optimal enjoyment
Materials and presentation are adapted to
the retailer’s inventory, learning
goals and existing level of knowledge. The course is on-site and at the client’s
convenience.
Wine for Cheese Professionals
A five-hour (two session) course that provides fundamentals for understanding
wine. Lectures, discussions, tastings and activities cover the following
topics:
- Sensory appreciation of wine based on a strategic approach
to tasting
- Overview of grape varieties, flavour profiles and major styles
- Theory and application of food and wine pairing principles
with an emphasis on cheese
- Instruction leading to the WSET Foundation Certificate is also
available. Ask for more information about this internationally recognized
credential.
Materials and presentation are adapted to the retailer’s
inventory, learning goals and existing level of knowledge. The course is on-site
and at the client’s convenience.
Master Classes for Cheese Retailers
Customized educational seminars and workshops for retail teams
